Matzoh Brei

Today I was lucky enough to have a husband who likes to make Matzoh Brei.  It was wonderful.  He found this recipe on the internet.

Ingredients:

2 sheets of Matzoh, 2 large eggs, salt and pepper and 2 Tablespoons of oil or butter. (I love butter but use whatever you want)

Preparation:

Break matzo in 1/2" pieces, place in a medium bowl and cover with very hot tap water.  Let stand for about 30 seconds and then drain. Squeeze water out of the matzoh pieces.  Beat eggs in another medium bow. and season with salt and pepper.  Add the drained matzo and mix till combined.  Heat the oil or butter in a large skillet over medium to high heat.  Spoon about 1/2 cup of batter into skillet or however much you want.  You can make smaller matzoh pancakes or larger.  Fry turning once until golden brown ... probably 1-2 minutes per side.  Serve with fruit, yogurt, maple syrup, jam, sugar or whatever you like.  Sometimes I salt mine a little more after the pancake is made.  Sometimes I sprinkle with raw sugar.  You figure it out but It is so good.
